A brisket portion sauced just prior to wrapping in foil
A brisket portion is prepared to wrap - and then back to the unit for more slow and low coooking. The ingredients used are a secret, but I CAN tell you that there is more going on here than the sauce!
Pig with wrapped brisket portions
Good Morning! Wrapped brisket portions shared a spot on the grill with this pig through the evening hours.

BBQ

When it comes to eating, there's nothing quite like barbeque.

There are countless regional varieties of barbecue around the globe - many more than the several ways you'll see it spelled across this site and in the world at large! I lean toward a "Texas Style" and for brevity in print, "BBQ"!

aVermonter beef brisket is a blend of Texas Style BBQ's. It's rubbed with a secret blend of seasonings, smoked and slow roasted, sauced, wrapped, and then slow roasted some more. It really is something of an art getting these just right - after the fats have broken down but not letting them go too far, and I've become very consistent with them - the meat and flavors just melt in your mouth.

Chicken may be prepared as a "Rosemary Chicken" or "Barbequed Chicken". Ribs are rubbed and sauced in a manner similar to the brisket. The sausage is a secret - this appetizer always runs out! Racks of lamb are prepared Scarborough Fair style (it includes parsley, sage, rosemary, and thyme).
